Vietnamese Food Anyday...agreed!


 A  few things I look for when choosing a recipe from a cookbook; are they dairy free,  can I get the ingredients here in Nicaragua, and is the recipe easy to follow?  This book fits all the criteria, so this is a good start. Let's cook with Andrea!

I tried the turmeric coconut rice, page 258 and it was good, but my favourite is still the recipe in the Modern Ayurvedic.  I am not a big fan of turmeric so that also plays a role.

The crispy caramelized pork crumbles, page 184 were tasty, tasty, tasty and I used the cheat with molasses.  We will most certainly be having these again... super for a rice bowl topper.

 Blistered green beans and bacon, page 239 - this one also features on my favourites of this year list....This is the best blistered bean I have had since Lai Lai  Restaurant was at the corner of Strange and Victoria St. in Kitchener.

Nuoc cham,  page 44...I tried this a couple times but I have yet to get the flavour just right.  I am willing to keep trying.

Ginger-Garlic fish parcels, page 161 are delicious and easy.  We have already had them at least twice and taken them to a fish cookout we hosted.

Street side corn and Chile, page 73....good but I am still looking for a great corn salad recipe...

My Cup O Tea

Over the years I have become a fan of tea.  My favourites are non-caffeine.  Green Teas, herbal teas and rooibus.  Almost any loose leaf tea will do.  I once got chamomile tea from a friends parents and it was really just a whole baggie of chamomile flowers.....it was from a place in Sarnia, Ontario but I am not sure exactly where.  It just seems so much fresher when you can recognize it by sight.... In June while on vacation I found a tea store selling hand tied leaves.  What a fantastic aroma of jasmine.  It is the Madame Butterfly tea by Capital Teas (www.capitalteas.com).  It was very expensive and I just couldn't afford it but they certainly had lots of great teas. My most recent vacation in Florida found me in the Spice and Tea Exchange (www.spiceandtea.com) where I purchased a small bag of loose leaf hazelnut cookie tea.  Ceylon black base so not my usual herbal but wonderful smell and tastes very rich.  An enjoyable tea....
